What is included with a half Beef/Cow bulk order?

Each cow or beef (processing term) is different in weight but you can plan on about 150 lb+ of meat and 50 lbs of optional organ meats (heart, liver, kidney, cheek & tongue), fat, and bones. You will customize the cuts, both type and thickness. We will contact you close to your order date, to make recommendations, if this is your first time and based on how you and your family cook.

Here is a sample cut sheet:

  • 1 whole Brisket 6-7 lbs
  • 2 Chuck Roasts
  • 2 Chuck Eye Steaks (2/pkg)
  • 2 Flat iron steaks (2/pkg)
  • 1- 4 rib prime rib roast
  • 4 Ribeyes
  • 2 Short Ribs
  • 1 whole Tenderloin Roast or 6 Filet Steaks
  • 6 NY strips
  • 1 TriTip Roast
  • 2 Loin Tip Roast
  • 3 London Broil Steaks
  • 2 Eye of Round Roasts
  • 2 Sirloin Kabob Cubes (2lb pkg)
  • 1 Flank steak (fajita or stirfry)
  • 1 Flap steak (fajita or stirfry)
  • 1 Skirt steak (fajita or stirfry)
  • 8 Meaty Soup Bone (2 pk)
  • 4 Stew Meat (2lb ea)
  • 2 Stirfry Meat (2lb ea)
  • 35 – 2 lbs ground beef
  • 1 Cheek Meat
  • 1 Tongue

Organ Meats:

  • Heart, Liver, Kidney
  • 1 5lb ground fat (to render Tallow)
  • 3 5lb bags of bones (for bone both)
  • Specifics:

Steaks cut 1.25 inch thick
Roasts 2.5-4 lb

For a whole Beef, the above is doubled, except the organ meats.
